Memorial Day Fresh Berry Cobbler



The first time I made this I used just blackberries, then I switched it up to just raspberries and now this third time I've thrown all the berries in the bowl. This dish is super easy and so delicious. Perfect for a dessert dish for that Memorial Day picnic or barbecue. 

Berry Cobbler

Ingredients:

2 1/2 cups of fresh blackberries, raspberries and blueberries
1 cup sugar
1 cup flour
2 teaspoons of baking powder
1/2 teaspoon salt
1 cup milk
1 stick of unsalted butter, melted

Wash berries. Stir together berries and sugar and let set for 25 minutes. This will coax out the juices of the berries and be sweetened up by the sugar. Preheat oven to 375* degrees.

After 20 minutes prepare the batter by stirring together flour, baking powder, salt and milk in a bowl. Next, stir in melted butter until well incorporated and you have few clumps.  Pour into a greased small baking dish, (8x8 or I used my round cake pyrex). Pour the in the batter then evenly distribute the berries/sugar mixture over the top.

Bake for 45 minutes, then let sit for 15 before serving. Serve warm or cooled with fresh whipped cream or vanilla ice cream.


Go ahead and make this ahead of time, it can be refrigerated for up to three days. It is just a little slice of summer.
