Zesty Italian Chicken with Red Potatoes and Vegetables

Everyone has one of those nights where you really don't want to make dinner, but you don't want to order or eat out. This is one of those fantastic meals that you just throw everything in the pan and your done.

This is taken from a pin from Pinterest, but the recipe was kind of bland for our palettes. So I added some zest, lots of garlic and herbs and fresh organic vegetables.

4-6 Chicken breasts, raw
5-6 small red potatoes, chopped
handful of fresh green beans, chopped
4-6 medium fresh carrots, chopped
Kraft Zesty Italian Dressing
3 cloves minced garlic
3 tablespoons melted butter
chopped Oregano, Rosemary and Thyme

Preheat oven to 350*. Place raw chicken in the center of a 9x13 baking dish. Season with salt and pepper.

On one side of chicken, place chopped red potatoes. Opposite side place carrots and green beans. Using Zesty Italian dressing, pour over chicken, veggies and potatoes generously.

Sprinkle with minced garlic and herbs. Then pour melted butter over entire dish.

Bake for 1 hour.

So when this dish is baking. Your mouth is watering...and your husband will come home and as "WOW! What's for dinner?" because that is exactly what Mr. KofColors did when I made this dish.

Please enjoy! Let me know if you make your own version and how it goes. I love to try new things.
