Chocolate Cinnamon Coffee Bars


I scored a Betty Crocker Dinner for Two Cookbook, 1964 edition, at the flea market last month. It had some really funny recipes in it such as "Full O'Baloney" and a jellied chicken. Which raises the question as to why these spectacular dishes are not around anymore? (joking) 


However I did find a really great Cinnamon Coffee Bar recipe (on the same page as the jellied chicken) that sounded really good so I attempted it. And after the first go, it was good but it was awfully dry and crumbly. 


So I tweaked a few things to make a whole new and better Cinnamon Coffee bar BUT I added some chocolate chips to make it  just perfect!! These are so delicious for dessert although my husband loves to take them for breakfast on his way to work. 


Ingredients:
1/4 cup soft shortening
1 cup brown sugar
1 egg
1/2 cup hot coffee
1/2 cup oil
1 1/2 cup flour
1 tsp. vanilla extract

1 tsp. baking powder

1/4 tsp. soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 cup chopped walnuts
1/2 cup chocolate chips

Directions: Heat oven to 350* degrees. Cream shortening, sugar, egg, oil and vanilla, stir in coffee. Mix dry ingredients and stir in. Blend in the walnuts and chocolate chips.

Spread in a greased oblong pan, 13"x9". Bake 20 minutes.

For the Icing: (Optional)
1 cup confectioners or powdered sugar
2-6 tablespoons of milk or other liquid
1/2 teaspoon of vanilla extract

Measure the sugar into a bowl. Add 3 tablespoons of milk and the extract. Stir until it forms a creamy paste. If you would like thinner frosting, add three more tablespoons of milk.
