Paula Deen's Disappearing Lemon Bars

Boy, it has been rough for Ms. Paula Deen. 

She may say some nasty things, on the flip side her Lemon Bar recipe is sure SWEET!

These bars are disappearing, two pans were made and the only photo that I was able to take was the four small servings Mr. KofColors didn't get to yet (photo above). 
Lemon Bars

For Crust:
2 sticks unsalted butter, cut into pieces at room temperature
2 cups all purpose flour
1 cup confectioners sugar, plus more for dusting
pinch of salt

For the Filling:
4 large eggs
2 cups granulated sugar
6 tablespoons flour
6 tablespoons FRESH lemon juice
  1. Pre-heat the oven to 350 degrees. Line a 9x13" baking dish with aluminum foil and butter the foil. 
  2. Make the crust: whisk the flour, confectioner's sugar and salt in a large bowl. Cut the butter with you fingers to make a crumbly dough. Press into prepared dish. Bake 20 minutes then transfer to a rack and let slightly cool. 
  3. Make the filling: Mix the eggs, sugar and flour in a bowl with a fork. Mix in lemon juice. Pour the filling over the crust and bake 25 minutes more. Let cool and sprinkle with confectioners sugar. 


These bars disappear fast!! Not kidding. 

They are perfect for taking to a BBQ, picnic or other festive occasion.
