Fresh Tomato Bruschetta


Ingredients:
6 Roma tomatoes, seeded and chopped
1/2 cup shredded Parmesan cheese
1/4 cup minced fresh Basil 
       *you can use 1 Tbsp. of dried, it is just as good
3 Tbsp. olive oil
3 garlic cloves, minced
        *Sometimes I cheat and use two tsp. of jar minced garlic
2 tsp. balsamic vinegar
1/8 tsp. salt
1/8 tsp. pepper
8 oz. fresh mozzarella cheese, sliced into small pieces
1 French bread baguette, cut into 1/2-in. slices
Butter
Garlic salt


Instructions:
Combine first eight ingredients in a small bowl. 
Spread baguette slices with butter. *I then lightly sprinkle Garlic Salt on the slices. Top each with a cheese slice. 
Place on un-greased baking sheets. Broil 3-5 minutes close to the heat source until the cheese is melted. 
With a spoon, top each slice with 1 Tbsp. of tomato mixture.  


This recipe was based off of Samantha Cass's recipe that was featured in Taste Of Home 2011. I added a few things and omitted others. 

I made this as an appetizer for a meal and ended up just eating this for dinner instead. The first time making this I didn't have fresh basil and used dried instead, it was just as good. 

If you have a different variation or use some different ingredients I would love to hear from you. This is something that will be made on a regular basis.
